wonton soup has always been my #1 winter craving. this customizable recipe is the perfect “clean-out-your-fridge” meal: throw in whatever veggies you have, add a protein and some frozen wontons, and you’re done! i personally love adding a bunch of fresh veggies from my garden to brighten this quick and easy meal.

Ingredients

  • 4 cups chicken broth
  • 2 tsp. dashi broth
  • 1 chicken breast tender, thinly sliced
  • 4-5 raw shrimp, peeled and deveined with tails removed
  • 4 large carrots
  • ½ cup mushrooms
  • ½ cup snow peas
  • 4-5 frozen dumplings
  • 1 head bok choy

Instructions

  1. begin preparing vegetables by slicing carrots into quarter-inch pieces and halving
  2. the bok choy. chop snow peas and mushrooms into bite sized pieces. set aside.
  3. in a pot over medium-high heat, stir the dashi into the chicken broth and bring to a boil.
  4. add chicken, carrots, and snow peas to the broth. poach 2-3 minutes before adding shrimp, bok choy, and mushrooms, and cook for another 2 minutes. (you can add ½ cup water at this point if you want more broth!)
  5. add frozen dumplings to the pot. reduce heat to low and continue cooking for about 5 minutes. transfer to a bowl and enjoy!
