Ingredients

  • 1 (6 oz.) box stuffing mix
  • 1 cup chicken stock
  • ¼ cup heavy whipping cream
  • 1 lb. ground turkey
  • 1 egg
  • ¼ cup cranberry sauce
  • 1 tbsp. sage
  • 1 tbsp. italian parsley
  • 2 tsp. thyme
  • 3 cloves garlic, minced
  • dash of salt and pepper

Instructions

  1. preheat oven to 400°F.
  2. heat chicken stock in the microwave for 2 minutes.
  3. in a large bowl, pour hot stock over the stuffing mix and stir. set aside until stuffing mix fully absorbs the liquid, about 10 minutes.
  4. add ground turkey, egg, heavy whipping cream, and cranberry sauce to a large mixing bowl. stir to combine.
  5. finely chop herbs and add to the turkey mixture. add stuffing, minced garlic, salt and pepper, mixing until well-incorporated.
  6. prep a baking sheet with cooking spray and begin shaping meatballs. with a gloved hand, form each meatball with 2-3 oz. of the turkey mixture (about 5 tbsp. each).
  7. place baking sheet into the preheated oven and bake 17-20 minutes.
  8. once meatballs have baked, broil an additional 3-5 minutes until browned.
  9. remove from oven and serve with gravy or cranberry sauce (i like to serve them with toothpicks for easy dipping!).
