Ingredients

FOR THE TUNA SALAD

  • 1 (5 oz.) can white meat tuna in water, drained
  • ½ avocado
  • 1 tbsp. everything but the bagel seasoning
  • 1 tbsp. lemon juice
  • ¼ cup red onion, diced

SUGGESTED SNACKS

  • 2 eggs, hard-boiled, shells removed
  • 2 wedges light laughing cow cheese
  • ½ cup strawberries
  • ½ cup grapes
  • ½ cup snap peas
  • 2 squares chocolate (milk, dark, white)
  • ¼ cup dark chocolate truffles
  • 4 slices cucumber
  • ½ cup nuts (cashews, almonds)
  • 6 slices salami
  • ½ cup cherry tomatoes

Instructions

  1. before assembling the snack box, prepare the tuna salad. in a small bowl, mash avocado and mix into the tuna with a squeeze of lemon juice. add red onion and everything bagel seasoning.
  2. gather two medium tupperware containers and begin assembling boxes. add protein by placing a scoop of tuna salad and a hard boiled egg into each box.
  3. add meats, cheeses, fruits, veggies, chocolate, and nuts to your liking. (i like to place my veggies against the tuna salad to keep it from spreading amongst the other ingredients).
  4. cover boxes and pack for a quick lunch on-the-go. happy snacking!
