i’m a savory breakfast girl, and this recipe is my go-to on lazy mornings when i’m craving something comforting, nutritious, and satisfying. this delicious breakfast pairs two sunny-side up eggs with sweet potato, brussel sprouts, kale, and shallots to keep you full and energized all morning long.

Ingredients

  • 1 small sweet potato
  • 5 brussel sprouts
  • 1 small shallot
  • 2 eggs
  • 1 large handful of kale
  • 1 tbsp. avocado oil
  • salt/pepper
  • garlic powder
  • onion powder
  • red pepper flakes

Instructions

  1. prepare the veggies by dicing the sweet potato and thinly slicing the shallot and brussel sprouts.
  2. in a skillet over medium-high heat, add avocado oil and cook sweet potato until crispy (about 3 minutes).
  3. add shallots and sauté until shallots begin to brown (about 2-3 minutes).
  4. add brussel sprouts and kale, stirring to combine. continue cooking over medium heat for 3-5 minutes.
  5. season with salt, pepper, garlic and onion powder to taste.
  6. with a spoon, form a well in the center of the pan.
  7. crack 2 eggs into the center of the pan. for sunny-side-up eggs, cook uncovered for about 3 minutes (or prepare eggs however you like!).
  8. sprinkle with red pepper flakes and serve.
