Summary

my mom always sends me pictures of the food she makes for my dad, and when she sent me a pic of this sandwich, i knew i had to try it. i begged suz to show me how it’s done, and she did not disappoint! this delicious sandwich can be made with whatever meats, cheeses, and veggies you prefer, but this combo of fried egg, fresh sourdough, and bacon is a lunchtime hit in our house.

Ingredients

FOR THE SANDWICH

  • 2 slices sourdough bread
  • 2 slices deli turkey breast
  • 2 eggs
  • 2 strips bacon, cooked
  • 1 slice havarti cheese
  • 2 tbsp. butter
  • 2 slices tomato
  • ¼ head butter lettuce
  • ½ avocado
  • ¼ red onion

FOR THE DRESSING

  • mayonnaise
  • ketchup
  • sriracha mayonnaise

Instructions

  1. in a medium skillet, fry the eggs, seasoning with salt and pepper to taste. set aside.
  2. add bread to the skillet over medium-high heat for 1-2 minutes until toasted.
  3. take each slice of bread and spread one side with equal parts mayonnaise, ketchup, and sriracha mayo.
  4. begin assembling the sandwich, adding the cheese, turkey, bacon, tomato, onion, and avocado. top with fried egg. (add or substitute whatever ingredients you’d like, but these are my favorites!)
  5. once assembled, add some butter to a skillet and toast sandwich until golden brown.
  6. remove from heat and enjoy, or pack a few to bring along to your next picnic!
