when i was a kid, my mom would make me this fried rice whenever i had a bad day, always finishing the dish with a ketchup smiley-face to cheer me up. as an adult, this nostalgic comfort food never fails to brighten my day. how could you stay in a bad mood when your eggs are smiling at you?

Ingredients

  • 1 cup white rice, prepared
  • 4 eggs
  • ¼ cup milk
  • 2 tbsp. butter
  • ½ cup frozen peas
  • ¼ cup green onions
  • ½ yellow onion
  • ½ cup carrots
  • 2 tbsp. ketchup
  • dash of garlic powder
  • dash of salt and pepper

Instructions

  1. prepare the veggies by finely chopping the onion, carrots, and green onions.
  2. crack two eggs in a small bowl and whisk with a splash of milk, salt, pepper, and garlic powder. transfer to a large greased skillet and scramble 2-3 minutes. set aside.
  3. add butter to the skillet and cook carrots over medium heat until just softened, about 2 minutes. add peas, onion, and green onions (feel free to add any other veggies you like!). sauté 3-5 minutes until tender.
  4. add scrambled eggs back to the skillet and mix with the vegetables. add ketchup and stir to combine. remove mixture from heat and set aside.
  5. in a small bowl, crack another two eggs with a splash of milk and whisk. grease a clean skillet with butter and gently pour egg in a thin layer across the bottom of the pan.
  6. cover and cook on low heat for 2-3 minutes. carefully flip to cook the other side (i used two spatulas!) and heat for another 2-3 minutes.
  7. remove from heat and set egg in a small bowl. using the egg as a “shell,” tightly pack the bowl with fried rice until full. trim to remove any excess egg remaining outside the bowl.
  8. place a plate over the bowl and flip to reveal the rice-filled egg dome. use ketchup to draw a fun design on the egg and enjoy!
