i’m a huge fan of lettuce wraps because they’re so easy and versatile; you can make them with whatever proteins, veggies, and sauces you have on-hand for a quick and filling low-carb meal. this super flavorful variation stars crispy air-fried shrimp with a sweet and sticky orange glaze. i like to top mine off with juicy mango pieces and plenty of veggies for a satisfying crunch, but feel free to add whatever ingredients you prefer- the more toppings, the better!

Ingredients

FOR THE WRAPS

  • 1 head bibb or butter lettuce
  • ½ lb. raw shrimp, peeled and deveined
  • 3 tbsp. cornstarch
  • 3-4 spritzes avocado oil spray
  • seasonings to taste
  • salt
  • pepper
  • garlic powder
  • onion powder
  • mustard powder
  • ground ginger
  • suggested toppings
  • mango
  • avocado
  • carrots
  • cucumber
  • green onions
  • black sesame seeds

FOR THE GLAZE

  • 1 tbsp. olive oil
  • 2-3 cloves garlic, coarsely chopped
  • 1 orange
  • 2 tbsp. soy sauce
  • 1 tbsp. cornstarch
  • 2 tbsp. Water

Instructions

  1. add cornstarch to a medium bowl and session with salt, pepper, garlic powder, onion powder, mustard powder, and ground ginger.
  2. spray the basket of an air fryer with some avocado oil. toss each shrimp in the seasoned cornstarch mixture, shaking off the excess, then arrange shrimp evenly in the basket. spritz the top of each shrimp with some additional avocado oil.
  3. heat shrimp in the air fryer at 350°F for 2-3 minutes, then flip and continue cooking for an additional 2-3 minutes.
  4. for the sauce, add olive oil to a pot over medium heat. add garlic cloves and sauté until fragrant.
  5. once the garlic begins to brown, add the juice of one orange and stir. bring the mixture to a boil, then stir in the soy sauce and remove the pot from heat.
  6. in a small bowl, make a slurry by whisking together cornstarch and water. add slurry to the sauce, stirring continuously. return pot to the stove top over low heat and allow sauce to thicken, stirring frequently. if needed, stir in a few additional tablespoons of water until sauce reaches desired consistency.
  7. add air-fried shrimp to the sauce, stirring until well-coated.
  8. to serve, arrange glazed shrimp in the center of each lettuce leaf, then top with diced mango and avocado, sliced cucumber, and shredded carrots. garnish with chopped green onions and a sprinkle of sesame seeds.
