we don’t talk about fajitas enough. fajitas are a full sensory experience: the sizzling, the aromatics, the colors and flavors, not to mention the serotonin boost i get when all eyes are on me at a mexican restaurant (my fellow leo-risings know there’s no better feeling). aside from the fantastic vibes, fajitas are actually perfect for meal prep. these fajita bowls are packed with protein and fiber, and they can be customized to suit your taste. season to your desired spice level, substitute with your favorite protein or veggies, and reheat whenever you’re ready. for extra protein and flavor, serve with a spicy jalapeno greek yogurt sauce.

Ingredients

FOR THE FAJITA BOWLS

  • 1 green bell pepper
  • 1 red bell pepper
  • 1 jalapeno pepper
  • 1 red onion
  • 1 small bunch cilantro
  • 1.5 lbs. flank or skirt steak
  • 1 tbsp. avocado oil
  • ½ cup chicken stock
  • 1 oz. package taco seasoning
  • additional seasonings (to taste): salt, pepper, onion powder, garlic powder
  • 4 packages microwavable jasmine rice
  • 1 lime

FOR THE SAUCE

  • 4 tbsp. nonfat greek yogurt
  • ½ tsp. hot & sweet pickled jalapeno juice
  • 1 tbsp. hot sauce

Instructions

  1. begin preparing vegetables by slicing peppers and onions into strips. chop cilantro and set aside.
  2. chop steak into bite-sized pieces.
  3. add oil to a large pan over high heat. add vegetables and toss in the oil until they begin to char. cover with a lid and continue cooking for 5-6 minutes, stirring intermittently.
  4. stir in the taco seasoning and chicken stock. cook for another 3 minutes, until vegetables are softened.
  5. remove vegetables from the pan and set aside. add steak to the pan and season generously.
  6. once steak has cooked to your desired temperature, add vegetables back to the pan and toss to combine.
  7. prepare rice per package instructions. transfer to a bowl and add lime juice, and pepper to taste, then mix in about a teaspoon of chopped cilantro.
  8. serve immediately or add portions of rice, veggies, and steak to meal prep containers and refrigerate for up to 3 days. to reheat, microwave at 30-second intervals until heated throughout.
