my all-time favorite sushi restaurant in la, katsuya, serves the most delicious tuna crispy rice, and i just had to figure out how to make my own at home. these spicy little tuna bites are made with crispy fried sushi rice and spicy mayo for a little kick. eat them as a snack or serve as hors-d’oeuvres; they’re sure to impress all of your guests!

Ingredients

  • 2 cups sushi rice, freshly prepared
  • 2 tbsp. sugar
  • 2 tbsp. rice vinegar
  • 6-8 oz. sushi-grade tuna
  • 1 green onion, finely chopped
  • 3 tbsp. spicy mayonnaise
  • 2 tsp. sesame oil
  • 2 tsp. soy sauce
  • 2 tsp. salt
  • 4 slices avocado

Instructions

  1. in a large bowl, mix rice with sugar, rice vinegar and 1 tsp. salt. transfer rice to a shallow, square pan and pack firmly. refrigerate at least 2 hours until cooled.
  2. finely chop tuna and place in a medium bowl. add green onion, mayo, sesame oil, soy sauce and remaining teaspoon of salt.
  3. slice cooked rice into small squares (about 2 inches wide). in a large frying pan, heat cooking oil to 350°F and drop in each square. cook 3-4 minutes per side and flip, removing from oil once golden brown. for a healthier variation of this recipe, spritz rice squares with spray oil and place in an air fryer at 370°F for 10-12 minutes, flipping halfway through.
  4. remove from heat and top each rice square with a heaping serving of the tuna mixture. sprinkle with sesame seeds, green onions and furikake, then top with avocado slices.
