Ingredients

  • 1 spaghetti squash
  • ½ yellow onion, diced
  • ½ cup mozzarella cheese, shredded
  • ⅓ cup parmesan cheese, shredded
  • 1 cup ricotta cheese
  • ½ lb ground beef or turkey
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. italian seasoning
  • 1 cup tomato sauce
  • 1 handful fresh basil
  • 1 handful fresh italian parsley
  • dash of salt and pepper

Instructions

  1. pierce the exterior of the squash with a fork several times and microwave 9-12 minutes, until beginning to soften. microwave time may vary depending on wattage and size of the spaghetti squash.
  2. set squash aside to cool for 5 minutes, then slice lengthwise. remove seeds and shred squash with a fork until it resembles spaghetti strands.
  3. in a large skillet over medium-high heat, sauté diced onion with a tablespoon of olive oil. add in ground meat, and continue cooking until onions are soft and translucent and meat is cooked through. season with garlic powder, onion powder, and italian seasoning.
  4. warm tomato sauce in a small saucepan over low heat. spoon sauce evenly over each half of the spaghetti squash, then add dollops of ricotta. top with shredded mozzarella and parmesan.
  5. place squash onto a baking sheet and broil 3-4 minutes until cheese begins to bubble. remove from oven and garnish with chopped basil and parsley.
