nothing says summer quite like a gooey, chocolatey s’more, and these delicious marshmallow cookie bars are the next best thing, minus the campfire. this semi-homemade recipe saves time by using store bought cookie dough, pressed and baked into a buttery graham cracker crust (of course, if you want to go the extra mile, homemade cookie dough would be a delicious swap). top it all off with a layer of toasted marshmallow and Hershey’s chocolates for that classic s’mores taste.

Ingredients

  • 1 14 oz. package graham crackers
  • ½ cup butter, melted
  • ½ tsp. vanilla extract
  • ½ tsp. salt
  • 1 16.5 oz. package prepared cookie dough, room temperature
  • 1 Hershey’s Milk Chocolate bar
  • 1 Hershey’s Cookies n’ Creme bar

Instructions

  1. begin by preheating the oven to 350ºF. add graham crackers to a food processor and pulse, mixing intermittently, until fine.
  2. in a medium bowl, combine cracker crumbs, vanilla extract, and salt with about half of the melted butter. once incorporated, gradually stir in the remaining butter.
  3. pour the cracker mixture into a greased 13 x 9 inch baking dish. using your fingertips, press crackers into the bottom of the dish and and along the edges to form a crust.
  4. top graham cracker crust with an even layer of cookie dough, then bake in the preheated oven for 12-15 minutes, until golden brown.
  5. once removed from the oven, top cookies with a layer of marshmallows (some marshmallows may need to be cut to accommodate the shape of your baking dish).
  6. watching closely to prevent burning, broil for 2-3 minutes until marshmallows are toasted and golden.
  7. once marshmallows are lightly browned, remove from the oven and immediately top with chocolate pieces, alternating milk chocolate and cookies n’ cream pieces. allow residual heat to gently melt the chocolate, or return to the oven momentarily until chocolate is sufficiently melted.
  8. serve right away for a warm and melty treat, or set in the refrigerator and chill before slicing into individual bars.
