this Hawaiian comfort food is the perfect little snack to take on-the-go for your next beach day. rich, savory spam is bundled together with seasoned sushi rice and crunchy furikake, all wrapped in nori for a satisfying blend of flavors and textures that’ll fit right in the palm of your hand. if you’ve never had spam, don’t knock it ‘til you try it- there’s a reason it’s a staple in so many Asian and Hawaiian dishes!

Ingredients

  • 1 12 oz. can spam
  • 2 cups sushi rice
  • 3 sheets sushi nori
  • ¼ cup soy sauce
  • 2 tbsp. sugar
  • 2 tbsp. rice vinegar
  • ⅓ cup furikake

Instructions

  1. rinse rice and cook on stovetop (or in a rice cooker) until tender. stir in rice vinegar and mix until well combined.
  2. slice spam to ¼ inch thickness (this should yield about 6-7 slices).
  3. add spam slices to a pan over medium-high heat and cook 3-4 minutes per side.
  4. while spam is cooking, combine sugar and soy sauce in a small bowl. pour half of the mixture over the spam and cook for another 2 minutes, then flip. pour over the remaining sauce and cook for an additional 2 minutes.
  5. before assembling, slice nori sheets vertically into thirds. place a musubi mold on top of the nori, leaving about an inch around the edge. pack about ¼ cup of rice into the mold, sprinkle liberally with furikake, then top with a slice of spam. press down to compress before removing the mold.
  6. carefully fold the nori over the filling and seal the edge (if necessary, moisten with a little bit of water to help the edges stick together). repeat with all remaining ingredients.
