Ingredients

FOR THE SALMON

  • ⅓ cup Maille x Mike's Hot Honey Special Edition Hot Honey Dijon Mustard
  • 3 tbsp. Mike’s Hot Honey
  • 4 6 oz. salmon filets
  • 1 tbsp. fresh dill
  • 2 tbsp. fresh chives
  • 2 cloves garlic, minced
  • ½ tbsp. salt
  • ½ tbsp. pepper

FOR THE POTATOES

  • 1 1 lb. bag gold baby potatoes
  • ¼ cup olive oil
  • ½ cup cheddar cheese
  • ½ cup sour cream
  • 2 tbsp. fresh chives
  • ¼ cup bacon bits
  • ½ tbsp. cracked black pepper
  • pinch of flakey salt

FOR THE BROCCOLINI

  • 2 bunches broccolini (about 1 lb.)
  • 3 cloves garlic, minced
  • 2 lemon wedges
  • pinch of red pepper flakes

Instructions

  1. preheat oven to 425°F. to begin preparing the potatoes, add 2 tbsp. salt to a large pot of water and bring to a boil. add potatoes and boil 15 minutes until fork-tender, then remove from heat and strain.
  2. transfer potatoes onto a baking sheet, then drizzle with olive oil. toss to coat.
  3. using the bottom of a clean glass, press each potato to flatten (about ¼ inch thickness).
  4. drizzle more olive oil over potatoes and season liberally with salt and pepper.
  5. place potatoes in preheated oven for 25 minutes, until the edges become crispy, then broil for 3 minutes. top each potato with a pinch of shredded cheese and broil for an additional 3 minutes.
  6. once removed from the oven, top each potato with a dab of sour cream, followed by a sprinkle of chopped chives, flakey salt, and bacon bits.
  7. in a small bowl, begin making the mustard glaze by whisking together mustard, hot honey, dill, chives, garlic, salt, and pepper.
  8. pat each salmon filet until dry, then brush on mustard glaze.
  9. transfer salmon to a greased airfryer basket at 370°F and cook for 8-10 minutes.
  10. while salmon is airfrying, add ½ cup water and broccolini to a medium pot. steam 5-7 minutes until broccolini becomes bright green and tender.
  11. heat 2 tbsp. olive oil to a saucepan over medium-high heat, then add remaining minced garlic. once fragrant, add broccolini and cook for an additional 2-3 minutes. sprinkle with flakey salt and red pepper flakes to taste.
  12. plate salmon alongside crispy potatoes and broccolini. add lemon wedges to garnish and serve!
