this hot honey miso butter is my new favorite thing- it’s so delicious, I would put it on literally anything. while roasted veggies are usually a somewhat unremarkable side dish, these miso butter carrots and green beans are the star of the show. top with hot honey glazed almonds and homemade crispy garlic to amp up the flavor and add some texture.

Ingredients

  • 1 lb. carrots
  • 1 lb. green beans
  • 2 tbsp. olive oil
  • ¾ cup white miso paste
  • ½ cup butter
  • 6 tbsp. hot honey
  • 1 tsp. salt
  • pepper
  • 3 cloves garlic, thinly sliced
  • canola oil, for pan frying
  • slivered almonds

Instructions

  1. preheat the oven to 425ºF.
  2. arrange carrots and green beans in two separate baking sheets. drizzle with olive oil then sprinkle with black pepper before placing in the oven to roast. green beans will roast for 7-10 minutes, while the carrots will cook for 20-25 minutes.
  3. while the vegetables are roasting, melt butter in a medium saucepan over low heat. stir in miso, salt, and 3 tablespoons of the hot honey.
  4. increase heat, bringing the mixture to a boil, then reduce heat and let simmer for two minutes. set aside.
  5. in a small saucepan, heat a few tablespoons of canola oil over medium-high heat. add thinly sliced garlic, stirring constantly until golden brown. set onto a paper towel lined plate to cool and become crisp.
  6. in a pan over medium heat, dry roast slivered almonds until fragrant, then add the remaining 3 tablespoons of hot honey, stirring to coat. spread honey-almond mixture onto a parchment lined plate and place in the freezer to harden. once firm, break apart into small pieces.
  7. once vegetables have finished roasting, remove each pan from the oven and cover with miso butter glaze. top with crispy garlic and glazed almonds to garnish.
