nothing says summer like fresh strawberries and ice cream! this semi-homemade classic uses store bought biscuit dough to cut down prep time, perfect for those warm summer nights when you want to spend less time in a hot kitchen. and, let’s be honest, desserts are SO much cuter when they’re served in little ramekins!

Ingredients

  • 1 ½ cup fresh strawberries, chopped
  • ⅛ cup sugar or monk fruit sweetener
  • ½ lemon
  • ¼ cup water
  • 1 can flakey biscuit dough
  • 1 qt. 365 Brand vanilla ice cream
  • 365 Brand oat-based whipped cream
  • powdered sugar

Instructions

  1. prepare the shortcake by baking biscuits per package instructions.
  2. while biscuits are cooling, add strawberries, sugar, lemon juice, and water to a saucepan over low heat. simmer for 15 minutes, stirring intermittently.
  3. once cooled, split biscuits in half. place half of a biscuit in the bottom of each ramekin and top with a spoonful of the strawberries, then add a scoop of ice cream and the other biscuit half.
  4. top each shortcake with a dollop of whipped cream. sprinkle with powdered sugar and serve.
