picture this: you’ve been out drinking all night, you’re seeing double, you’re digging through the kitchen when suddenly you find it… the holy grail: a bag of Tostitos and some shredded cheese. inspiration hits, but you’re DEFINITELY not in any shape to fire up the oven. it’s time for an old favorite: microwave nachos. if you’re feeling ambitious, top it off with some delicious homemade guac and some jalapeno slices. safety tip: make the guac BEFORE you go out to minimize the late night kitchen shenanigans.

Ingredients

FOR THE CHIPS

  • 2 cups tortilla chips
  • ½ cup mexican shredded cheese blend
  • toppings of your choice: jalapeno slices, sour cream, salsa

FOR THE GUAC

  • ¼ cup chopped red onion
  • 1 small bunch cilantro
  • 1 lime
  • 2 avocados
  • 1 tomato
  • garlic powder
  • onion powder
  • salt and pepper

Instructions

  1. pour chips onto a microwave-safe plate and pile on the shredded cheese. pop it in the microwave and cook until the cheese is melty and delicious (about a minute or two). depending how much you’ve been drinking, feel free to just eat them at this point, but if you’re up for it, move on to the guac in step 2.
  2. i wouldn’t encourage you to handle any sharp objects while intoxicated, so let’s pretend you prepped your fre-shavocado, chopped your red onion, and diced your tomatoes ahead of time. in a medium bowl, mash up the avocado then mix in the onion, tomato, cilantro, and a squeeze of fresh lime juice, then season to taste.
  3. scoop your guac onto your nachos along with some sour cream, and scatter with jalapeno slices. proceed to stuff your face, drink some water, then go to bed.
