i can’t think of a better way to enjoy brussel sprouts than to pair them with sweet-tart cranberries and crunchy maple-toasted pecans. scoop these sprouts onto your salad for a boost of flavor, or serve as the perfect side dish for thanksgiving dinner.

Ingredients

  • 1 lb. brussel sprouts
  • 1 shallot
  • 2 cloves garlic
  • ¼ cup maple syrup
  • ½ cup pecans, chopped
  • ½ cup sweetened dried cranberries
  • 3 tbsp. olive oil
  • 1 tsp. red pepper flakes
  • 1 cup chicken broth
  • salt and pepper to taste

Instructions

  1. in a skillet over medium-low heat, dry roast pecans for 1-2 minutes. pour maple syrup over pecans and toss to coat. heat, allowing mixture to bubble for 2-3 minutes until mixture becomes thickened. pour pecans onto parchment and set aside to cool.
  2. prepare veggies by halving the brussel sprouts, thinly slicing the shallots, and chopping the garlic until fine.
  3. add olive oil to a large pan over medium heat. place brussel sprouts cut-side-down onto the skillet and cover. continue cooking 2-3 minutes until just beginning to brown.
  4. add garlic and shallots and sauté with brussel sprouts until tender, about 10 minutes.
  5. once brussel sprouts are nearly cooked through, add chicken broth and season with salt, pepper, and red pepper flakes. stir in the pecans and cranberries.
  6. remove from heat and serve as a side, on a salad, or on its own!
