this is my quick take on a chipotle-inspired bowl! this recipe is especially good for those of you with a busy schedule. you can throw the prepared ingredients in the fridge and assemble when needed! very healthy, easy, and satisfying.

Ingredients

FOR THE SALAD

  • 1 head romaine lettuce
  • 16 oz. chicken breast
  • 1 tsp. avocado oil
  • 1 15 oz. can whole kernel corn, drained
  • 1 jalapeño
  • 2 limes
  • ¼ red onion
  • 1 avocado
  • 1 cup cherry tomatoes
  • ¼ cup greek yogurt
  • 1 bunch cilantro
  • 1 cup white jasmine rice

SUGGESTED SEASONING

  • siete habanero hot sauce
  • salt
  • pepper
  • garlic powder
  • onion powder
  • paprika
  • chili powder

Instructions

  1. in a shallow bowl, massage desired seasonings into chicken breast (wear gloves if using any spicy ingredients!).
  2. add avocado oil to a medium skillet and cook chicken over medium-high heat for 5-7 minutes each side, until it reaches an internal temperature of 165°F. once complete, dice chicken and set aside.
  3. prepare veggies by dicing the jalapeno, slicing the avocado, and chopping cilantro, romaine, and red onion.
  4. in a small bowl, combine corn, jalapenos, onion, and a handful of cilantro. toss with the juice of one lime, adding salt and pepper to taste. set aside.
  5. prepare rice (i suggest using a rice cooker) and stir in juice of ½ a lime and another handful of cilantro. season to taste with salt and pepper.
  6. in a small bowl, add greek yogurt and hot sauce to taste (you may want to add a few tablespoons of water to reach desired consistency).
  7. assemble each bowl, adding chicken, rice, lettuce, avocado, tomatoes, and corn salsa. drizzle with hot sauce dressing and serve with a crack of black pepper.
