there’s nothing better than soft, buttery, homemade biscuits. if i could encourage you to memorize just one recipe, this would be the one: it’s quick, inexpensive (most of the ingredients are pantry staples you likely already have at home), versatile, and delicious. serve them on their own, smother them with butter and jam, or use them in a savory recipe, like my crab cake eggs benedict.

Ingredients

  • 2 cups all-purpose flour, loosely packed
  • 2 tbsp. cornstarch
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ cup butter
  • ¾ cup buttermilk
  • 1 tsp. flakey salt

Instructions

  1. preheat oven to 425°F.
  2. in a large bowl, stir together flour, cornstarch, baking powder, baking soda, and salt. add butter and mix by hand or with a pastry cutter until ingredients are combined, resembling coarse crumbs.
  3. stir in buttermilk and gently combine until dough just begins to form. empty dough onto a floured workspace and knead briefly.
  4. using a rolling pin, flatten dough into a large rectangular shape, then fold into thirds to begin creating the flakey layers. roll again to flatten, then fold into thirds a second time. flatten once again with a rolling pin, and fold into thirds for a final time.
  5. roll out the dough to approximately ½ inch thickness. slice into 6 equal portions then set onto a parchment-lined baking sheet.
  6. brush the top of each biscuit with a bit of buttermilk and sprinkle with flakey salt. place in the preheated oven and bake for 15-17 minutes until golden brown.
