Summary

looking for a quick and healthy breakfast? these flourless pancakes are made with only four ingredients, and you can customize them however you like! i like to serve mine with fresh strawberries, but you could top these with some maple syrup, blueberries, whipped cream, powdered sugar, or whatever you like!

Ingredients

  • 2 eggs
  • 1 banana
  • 1 tsp. cinnamon
  • ½ tsp. vanilla bean paste

Instructions

  1. in a small bowl, mash the banana with a fork. crack in eggs, then add cinnamon and vanilla bean paste, stirring to combine.
  2. in a greased skillet over medium heat, pour batter to form 3 small pancakes (feel free to add chocolate chips or blueberries at this point!). cook each side for about 1-2 minutes, removing from heat once golden brown.
  3. serve with toppings of your choice and enjoy!
