if you hadn’t heard, twix is my absolute favorite candy bar. during quarantine, i started exploring ways to get all the flavors of a twix bar, while giving a healthier twist to them… and along came dates. dates are now my WORLD. their ooey gooey caramel flavor and texture are at the star of this recipe!
p.s. flakey salt is a necessity for this! don’t forget it!

Ingredients

  • 1 cup almond flour
  • 2 ½ tbsp. coconut oil, melted
  • zest of ½ an orange
  • 3 tbsp. monk fruit sweetener
  • 1 tsp. almond extract
  • 1 tbsp. vanilla extract
  • 3 tbsp. cold water
  • ¼ cup hot water
  • 15 pitted dates
  • 1 (9 oz.) bag vegan chocolate chips
  • sprinkle of flakey salt

Instructions

  1. begin by soaking dates in a large bowl of a hot water for 10 minutes and preheat oven to 350°F.
  2. to make the almond cookie base, mix together almond flour, melted coconut oil, and the orange zest.
  3. mix in sweetener, almond extract, vanilla extract, and 3 tbsp. water, stirring to incorporate.
  4. press the almond flour mixture into a parchment lined pan (for a thicker crust, use a loaf pan; for thinner crust, use an 8x8 pan). to ensure cookie bakes evenly, use a fork to press dough firmly before baking.
  5. transfer dough to the oven and bake 10-12 minutes. let cool for 10 minutes.
  6. drain dates and blend with ¼ cup hot water in a high speed blender (this will act as the caramel in our bars).
  7. layer the blended date mixture over the cooled cookie layer and place in the freezer for 10 minutes.
  8. while cookie-date bars cool, melt chocolate chips in the microwave for 30-second intervals, stirring until smooth.
  9. remove cookie from freezer and pour melted chocolate over top, spreading to cover the date layer. sprinkle with flaky salt.
  10. freeze twix for an hour until solid, then chop into bars and enjoy!
