okay, so these aren’t the most authentic taquitos, but they are crunchy and delicious! i came up with this recipe to work with the ingredients i had available while procrastinating grocery shopping. i used greek yogurt in place of sour cream to cut some calories and pack more protein in every bite. for extra crispy taquitos, be generous with the egg wash!

Ingredients

FOR THE TAQUITOS

  • 8 (6 inch) grain-free tortillas
  • 2 chicken breasts, cooked and shredded
  • ¾ cup mozzarella cheese
  • ¼ cup yellow onion, diced
  • 1 (4 oz.) can diced green chiles
  • ¼ cup greek yogurt
  • 1 egg
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • dash of salt and pepper
  • 1 avocado

FOR THE SAUCE

  • 3 tbsp. greek yogurt
  • 2 tbsp. water
  • 1 tsp. mexican seasoning

Instructions

  1. in a mixing bowl, stir together greek yogurt, onion, chiles, cheese, and seasonings. add shredded chicken and mix to combine.
  2. to make the egg wash, crack an egg in a small bowl and add a splash of water. whisk vigorously.
  3. fill each tortilla with the chicken mixture. roll to form taquitos and brush with egg wash.
  4. place taquitos in the air fryer at 350°F for 5-7 minutes or preheat conventional oven to 350°F and bake 10-12 minutes.
  5. in a small bowl, mix greek yogurt, water, and mexican seasoning.
  6. once golden brown, remove taquitos from the fryer (or oven) and drizzle taquitos with sauce. garnish with sliced avocado and serve.
