funnel cakes are the quintessential fair food!! i grew up going to knotts berry farm and i would always get a boysenberry funnel cake to split with my mom. these funnel cakes are so light and fluffy, and the ice-cream adds another layer of flavor and texture to the mix. don’t forget to garnish with sprinkles, candy, or cookies!

Ingredients

  • 2 ¾ cups bisquick baking mix
  • 1 ¾ cups milk
  • 2 tbsp. vegetable oil plus 1 quart (for frying)
  • 1 egg
  • 3 capfuls vanilla extract
  • 2 pints ice cream of choice
  • sprinkles to taste

TOOLS NEEDED

  • 6-inch stainless steel funnel cake mold with ladle

Instructions

  1. in a bowl, whisk together bisquick, egg, milk, vegetable oil, and vanilla extract to form a smooth batter.
  2. in a large frying pan, heat oil to 350°F.
  3. transfer batter to a large plastic bag and
  4. trim one edge to create a piping bag. using the funnel cake mold as a guide, stream batter into the oil to form a cake. fry for about 1 minute per side, then remove from oil and set on a paper-towel-lined plate.
  5. with a large knife, cut pint of ice cream into one-inch slices and sandwich between two funnel cakes.
  6. garnish with sprinkles, oreos, or whatever you like, and enjoy!
