i love to meal prep a big batch of these light and fluffy egg bites to make sure we have a healthy breakfast option on-hand throughout the week. the addition of blended cottage cheese amps up the protein content and gives these bites a delicious, custard-like quality. for an even smoother texture, i like to bake my egg bites in a water bath– i promise it’s worth the extra step, just remember to be careful when removing from the oven! my favorite thing about this recipe is that it is so customizable: feel free to swap the peppers and onions for mushrooms, mix in some shredded cheese, or add breakfast sausage instead of bacon. the possibilities are endless!

Ingredients

  • 16 oz. egg whites
  • ½ of a red bell pepper
  • ½ of a medium onion
  • 1 (12 oz.) package turkey bacon
  • 5 oz. spinach
  • 16 oz. cottage cheese
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tbsp. chicken bouillon

Instructions

  1. preheat the oven to 350°F.
  2. dice the bell pepper, onion, and turkey bacon. roughly chop the spinach and set aside.
  3. heat a small amount of avocado oil in a pan over medium heat, then add the onion and cook for 3 minutes until slightly softened.
  4. add bell pepper and continue cooking for another 3 minutes, then stir in turkey bacon, spinach, and seasonings. cover and remove from heat.
  5. in a food processor, blend cottage cheese until smooth.
  6. add egg whites and cottage cheese to a large mixing bowl, then add the vegetables and turkey bacon.
  7. prepare a water bath by adding about 1 inch of boiling water to a large casserole dish. place a muffin tin in the water bath.
  8. grease the muffin tin and fill each well with ¼ to ⅓ cup of the egg mixture.
  9. bake for 22–25 minutes, until eggs are set. serve immediately, or store in an airtight container and refrigerate for 3–5 days, or freeze for up to 2 months. to reheat, microwave for 1–2 minutes, or warm in the air fryer at 350°F for 3–4 minutes.
