Ingredients

FOR THE NACHOS

  • 4 chicken breasts, thinly sliced
  • 2 cups all-purpose flour
  • 2 eggs
  • 1 (9.25 oz.) bag nacho cheese or cool ranch doritos
  • 3 tbsp. cheddar popcorn seasoning
  • ½ tbsp. garlic powder
  • ½ tbsp. onion powder
  • 1 tsp. of cayenne pepper
  • 1 quart vegetable oil (for frying)
  • fresh parsley (to garnish)

FOR THE DIP

  • ¼ cup sour cream
  • 3 tsp. ranch seasoning powder
  • 2 tbsp. water

Instructions

  1. add chicken to a large plastic bag and use a rolling pin to flatten until paper thin. remove from bag and cut into bite-sized, triangle-shaped pieces.
  2. in another plastic bag, use the rolling pin (or pulse in a food processor) to crush doritos until semi-fine.
  3. transfer crushed chips to a large shallow bowl. gather 2 more bowls and set up a breading station. in the first, crack eggs and whisk vigorously. in the next bowl, add flour and season with garlic powder, salt, pepper, onion powder, cayenne, and popcorn seasoning.
  4. with one hand, dredge chicken in flour mixture, shaking off any excess. with the other hand, dip chicken in beaten egg. finally, coat chicken in doritos, pressing to adhere crumbs.
  5. in a large frying pan, bring vegetable oil to 350°F and begin frying chicken in small batches. cooking 3-4 minutes then remove from oil and place on a paper towel.
  6. in a small bowl, combine sour cream, ranch seasoning, and water, stirring to form a dipping sauce.
  7. plate nachos and drizzle with ranch sauce. garnish with fresh parsley and enjoy!
