if you’re looking for a way to elevate your avocado toast game, you have to try this recipe! simply swap out the bread for some cheesy homemade hash browns, add a perfectly cooked egg (runny yolks are a MUST in my humble opinion), and some sliced avocado. top with some momofuku chili crunch to give this breakfast a delicious smokey kick.

Ingredients

  • 3 russet potatoes, peeled and shredded
  • 6 eggs
  • 2 tbsp. all-purpose flour
  • 1 cup white cheddar cheese, shredded
  • 2 cloves garlic, minced
  • 2 tsp. salt
  • 2 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. fresh rosemary, chopped
  • 2 small avocados
  • Momofuku Chili Crunch to taste

Instructions

  1. begin by rinsing shredded potatoes with cold water (this helps prevent the potatoes from browning). squeeze rinsed potatoes with a clean kitchen towel until thoroughly dried.
  2. in a large mixing bowl, combine shredded potatoes and one egg, then add flour, shredded cheese, minced garlic, and seasonings. stir until incorporated.
  3. begin forming potato patties by hand, using about ½ cup of the mixture per hash brown.
  4. for extra crispy hash browns, place patties in a greased air-fryer basket and cook at 375°F for 15 minutes. Flip patties and cook for an additional 5-8 minutes until crisp and golden.
  5. for stovetop preparation, heat 1 tsp. avocado oil (or cooking oil of your choice- I like spray oil!) in a medium skillet over medium-high heat and pan-fry hash browns for 4 minutes on each side. remove from heat and transfer hash browns to a paper-towel-lined plate to absorb excess oil.
  6. begin prepping your toast-toppers by slicing the avocados and cooking the remaining eggs however you’d like. for perfectly runny yolks, crack an egg into a greased skillet over medium heat. Season to taste and cook uncovered for 2-3 minutes, then cover and cook an additional 1-2 minutes until egg whites are fully set.
  7. to assemble your “toast,” top each hash brown with avocado and egg. drizzle momofuku chili crunch to taste and enjoy!
