in my opinion, the best place to get this classic Hawaiian fusion dish is at the Rainbow Drive-In in Oahu. if that’s a bit out of reach, your kitchen could be a close runner-up (though my version may not be the most authentic)! it’s super easy to prepare this hearty Hawaiian favorite at home- just assemble your patties, smother with decadent homemade gravy, and top with the perfect sunny-side-up egg. this rich dish is a great, filling meal for any time of day.

Ingredients

FOR THE PATTIES

  • 1 lb. ground beef (80/20 blend)
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • ½ sweet onion, finely chopped
  • 3 cloves garlic, freshly minced
  • dash of salt and pepper

FOR THE GRAVY

  • 1 sweet onion, thinly sliced
  • 2 cloves garlic
  • 4 tbsp. butter
  • 2 tbsp. all purpose flour
  • 2 cups beef stock
  • 1 tbsp. chicken bouillon powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • dash of salt and pepper

BRING IT ALL TOGETHER

  • 1 cup white rice
  • 4 eggs
  • 2 tbsp. green onion, chopped

Instructions

  1. begin making the patties by combining ground beef, seasonings, garlic, and onion. divide into four equal portions and shape into patties.
  2. add a drizzle of avocado oil to a large pan over medium-high heat. set in the patties and cook 3-4 minutes per side, then remove from heat and let rest.
  3. in a saucepan, melt 4 tbsp. butter over low heat and add thinly sliced onion. season with a dash of salt and cook until onions are browned and sweet, about 20 minutes.
  4. while the onions are cooking, make a roux in a separate saucepan by melting 4 tbsp. butter over low heat, then sprinkle in flour and whisk to combine. stir in bouillon, garlic powder, onion powder, salt, and pepper. cook for about two minutes, stirring constantly.
  5. slowly pour beef stock into the pan, stirring to incorporate. increase heat until gravy reaches a boil, then reduce to a simmer.
  6. while the gravy simmers and thickens, prepare the eggs and rice. cook rice on the stovetop until tender, or prepare using a rice cooker. next, crack eggs into a skillet over medium-high heat. cover and cook 2-3 minutes, until whites are set but yolks remain runny.
  7. once all ingredients are prepped, begin plating. spoon a serving of rice onto the plate (I like to pack it into a small bowl then flip the compacted rice onto the dish for a picture perfect presentation!). top with a beef patty, then smother with gravy and add the onions. top it all off with a sunny-side up egg and sprinkle with green onion.
