i think everyone has their own version of this classic Christmas candy- some may call it “cracker candy” or “toffee bark,” but i’ve always known it by its addictive nickname, “Christmas crack.” whatever you call it, this holiday favorite will satisfy any sweet tooth with a bed of crunchy saltines covered in sweet toffee, topped with a thick layer of semi-sweet chocolate. this quick and easy candy makes the perfect homemade gift- just place them in a nice cookie tin or treat bag and seal with a bow. i like to top mine with some seasonal sprinkles, but feel free to add your own flair- you could sprinkle the bark with some roasted almonds, add some M&Ms, or drizzle on a little bit of white chocolate.

Ingredients

  • 2 rolls saltines
  • 1 cup butter
  • 1 ¾ cup brown sugar
  • 2 tsp. cake batter extract
  • 1 tsp. salt
  • 2 ½ cups semi-sweet chocolate chips
  • sprinkles for garnish

Instructions

  1. arrange saltine crackers in a single layer on a parchment lined baking sheet.
  2. in a pot over medium-low heat, melt butter then stir in brown sugar, extract, and salt.
  3. increase heat to medium and bring mixture to a boil. use a candy thermometer to check the temperature of the mixture, aiming for 300ºF.
  4. once the mixture reaches 300ºF, pour evenly over the saltines.
  5. immediately sprinkle chocolate chips in an even layer and allow the residual heat to melt the chocolate. use an offset spatula to spread chocolate evenly over the entire sheet.
  6. top with sprinkles and refrigerate until hardened, about 30 minutes.
  7. break bark into pieces and enjoy!
