there’s no better summer drunchie than a classic ice cream sandwich, and this take on the simple treat is inspired by disneyland’s chipwich! the recipe is simple: just sandwich a thick layer of vanilla ice cream between two extra-large chocolate chip cookies, then roll the edges in chocolate chips. this dessert comes together super quickly thanks to a simple hack- rather than scooping and smushing ice cream onto the cookies, create perfectly sized, even layers by slicing straight through the pint’s packaging. disclaimer: if you’ve been drinking, maybe ask a sober friend for some help with this part… it may be delicious, but no ice cream sandwich is worth losing a finger.

Ingredients

  • 1 (16.5 oz.) package ready-to-bake cookie dough
  • ½ cup chocolate chips
  • 1 pint vanilla ice cream

Instructions

  1. preheat the oven to 350ºF.
  2. to create extra large cookies, separate packaged cookie dough into four equal portions, rolling each dough portion into a ball. with clean hands, compress each ball to flatten slightly. space evenly on a lined cookie sheet and bake until golden brown, around 15-20 minutes.
  3. once cookies have finished baking, remove from the oven and let cool for a few minutes. while cookies are cooling, pour chocolate chips into a shallow bowl and set aside.
  4. use a serrated knife to cut the pint of ice cream straight through the packaging to make thick, round slices.
  5. pop ice cream slices out of the packaging and place each onto a cookie, then sandwich with another cookie. roll each sandwich in chocolate chips to adhere. enjoy immediately or freeze until ready to eat.
