this super easy chia seed pudding literally takes under a minute to prep- just mix together the ingredients and stick it in the fridge before you go to bed! this low-effort, high-reward recipe makes the perfect light breakfast or quick snack. customize it by adding whatever sweeteners, extracts, and toppings you like (my current obsession is adding Kai Coffee’s macadamia nut syrup, raspberries, matcha powder, and a drizzle of honey… *chef’s kiss* ).

Ingredients

  • 1 cup So Delicious unsweetened coconut milk
  • 3-4 tbsp. chia seeds
  • ¾ tbsp. honey

Instructions

  1. add coconut milk, chia seeds, and honey to a small jar and stir (for thinner pudding, add 3-3 ½ tbsp. chia seeds, for a thicker pudding add 4). place the lid on the jar and shake well to combine.
  2. refrigerate overnight. once set, serve with whatever fruits and toppings you prefer, or store in the refrigerator for up to 5 days.
