i recently went to the taco bell cantina in las vegas and became obsessed with the cheesy gordita crunch! i had to figure out how to recreate it at home with my own fresh ingredients. skip the drive-through: this cheesy, crunchy masterpiece will satisfy all of your late-night cravings!

Ingredients

  • 1 ½ large flour tortillas
  • 3 crunchy taco shells
  • ¼ cup shredded mexican blend cheese
  • ¼ cup sour cream
  • 3 tbsp. canned chipotles in adobo sauce
  • ½ head iceberg lettuce
  • 1 medium tomato
  • 3 cloves garlic, chopped
  • 1 tsp. avocado oil

SEASONINGS

  • salt
  • pepper
  • onion powder
  • garlic powder
  • taco seasoning

FOR THE FILLING

  • ½ cup frozen hash browns or ¼ lb ground beef

Instructions

  1. cook frozen hash browns in an air fryer at 400°F for 10 minutes (if you don’t own an airfryer, cook in the oven or fry in a saucepan).
  2. to make the sauce, combine sour cream, 2 tbsp. water, and 3 tbsp. of the liquid from a can of chipotles in adobo. for extra heat, chop and blend in one of the chipotle peppers. add another tablespoon of water to thin sauce, if needed.
  3. in a large pan over medium heat, add avocado oil and sauté garlic until fragrant, about 1-2 minutes.
  4. add ground beef season with salt, pepper, onion powder, garlic powder, and taco seasoning. cook until browned, about 8-10 minutes, then remove from heat.
  5. in a large pan, heat flour tortilla until warm and soft. remove from heat and sprinkle with shredded cheese. microwave up to 1 minute, if needed, to melt the cheese.
  6. once the tortilla is hot, take it out of the pan and cover entirely with cheese.
  7. wrap the tortilla around a crunchy taco shell, adhering with the cheese. fill with either potatoes or ground beef, and top with tomatoes, cheese, and lettuce. drizzle sauce and enjoy!
