Ingredients

  • 1 whole rotisserie chicken
  • ¾ cup cottage cheese (or plain nonfat greek yogurt)
  • 10 medium tortillas
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup buffalo sauce
  • seasonings, to taste:
    • salt
    • pepper
    • onion powder
    • garlic powder

Instructions

  1. remove and discard the skin from the rotisserie chicken. using two forks, shred the meat in a large mixing bowl. set aside.
  2. transfer cottage cheese into a food processor and blend until smooth.
  3. add blended cottage cheese and buffalo sauce to the shredded chicken. stir to combine, then mix in shredded cheese and seasonings.
  4. in a skillet over medium heat, warm tortillas for approximately 10-20 seconds per side, until softened. once malleable, add a heaping spoonful of buffalo chicken towards the lower edge of each 1. tortilla, then roll tightly to form a log-shape.
  5. place taquitos, seam-side down, into the basket of an air-fryer. spritz over the top with a bit of cooking oil and cook at 390°F for 12 minutes.
  6. once crispy, remove from the air fryer and serve while hot.
