this festive halloween appetizer is sure to impress, and you can even prep them in advance! whip these up the night before your spooky get-together and pop them in the oven fifteen minutes before guests arrive. i love to serve these with my fried pita bread (recipe here), veggies, or tortilla chips! p.s. you can enjoy the dip on it’s own any time throughout the year, without the extra jack o’lantern steps!

Ingredients

  • 1 rotisserie chicken, shredded
  • ½ cup sour cream
  • 8 oz. cream cheese
  • 3 green onions
  • ½ white onion
  • 3 orange bell peppers
  • 1 cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ¼ cup Frank’s RedHot hot sauce
  • 2 tbsp. ranch seasoning blend
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • salt and pepper to taste

Instructions

  1. preheat oven to 400°F.
  2. finely dice white and green onions.
  3. in a large bowl, mix shredded chicken, cream cheese, mozzarella, cheddar, sour cream, onions, ranch seasoning, garlic powder, onion powder, hot sauce, salt and pepper. stir until well-combined.
  4. spread dip into a cake pan or baking tray and place in preheated oven for 15-20 minutes.
  5. to make the jack o’ lanterns, first slice a bit off the bottom of each bell pepper to allow them to sit upright. cut off the top third of the pepper and remove seeds. with a paring knife, cut jack o’ lantern faces into the peppers.
  6. once dip is ready, remove from the oven and stuff into each pepper. replace the top of the pepper. serve with chips and veggies for dipping!
