this cobbler is the perfect summertime treat! peaches are best when in-season, but you can customize this recipe throughout the year to use whatever fruit is fresh (frozen fruit like berries would be SO GOOD too). the sweet, juicy peaches are perfect in contrast with the crunchy oats. don’t forget to pile on the vanilla ice cream!

Ingredients

FOR THE FILLING

  • 4 peaches, sliced
  • ¼ cup sugar
  • 1 tsp. vanilla extract

FOR THE TOPPING

  • ⅓ cup brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • ½ cup cold butter
  • 1 tsp. vanilla extract
  • ⅔ cup all-purpose flour
  • ⅓ cup rolled oats

SERVE WITH

  • vanilla ice cream
  • mint (to garnish)

Instructions

  1. preheat oven to 350°F.
  2. slice peaches and add to a medium sized pot over medium heat. add sugar and vanilla extract and heat 5 minutes, stirring constantly.
  3. lower heat to a simmer and continue cooking until peaches soften, about 15 minutes.
  4. in a mixing bowl, stir together brown sugar, salt, cinnamon, flour, and oats, add vanilla extract, and cut in cold butter until mixture becomes coarse and crumbly.
  5. scoop peaches into individual ramekins, or pour into an 8-inch cake pan. top with crumble mixture, spreading evenly.
  6. place ramekins or cake pan into the preheated oven and bake 15-20 minutes.
  7. serve with vanilla ice cream and a fresh sprig of mint.
