if you watch the vlogs, you know that there is nothing that i love more than whipping up a homemade dinner for my friends after a long night out, and this dish has become one of Loshi’s FAVORITE meals whenever she crashes at my place. while this recipe would traditionally call for penne, the angelic Alisha Marie is obviously more of an angel hair girlie (but feel free to substitute any pasta of your choosing!). although this recipe calls for a hefty pour of Tito’s, I promise you won’t end up with a boozy dinner- the alcohol cooks out as it is heated, leaving you with a complex and luscious vodka sauce.
Ingredients
- 1 (16 oz.) box angel hair pasta
- 3 tbsp. salted butter
- 2 shallots, finely chopped
- 3 cloves garlic, finely chopped
- 1 (6 oz.) can tomato paste
- ¼ cup Tito’s vodka
- ½ cup heavy whipping cream
- 6-8 oz. grated parmesan cheese
- seasonings to taste: black pepper, salt, garlic powder, onion powder, crushed red pepper flakes (optional)
- fresh herbs: parsley, basil, oregano, rosemary
Instructions
- begin by bringing a large pot of heavily salted water to a boil over high heat. add the pasta and cook until al dente, about 4-5 minutes. when pasta is near tender, reserve about a cup of the pasta water and set aside before draining the pasta.
- in a large skillet over medium-high heat, add butter and stir intermittently until melted. add the garlic and shallots and cook until fragrant, around 6 minutes, then stir in the tomato paste and heat for an additional 3-5 minutes.
- add vodka to the skillet, stirring until well incorporated, then gradually add the cream while mixing continuously. stir in seasonings and parmesan cheese.
- add a splash of the reserved pasta water, gradually stirring in more liquid until the sauce reaches your desired consistency. simmer for 5-10 minutes.
- stir angel hair into the sauce and toss to coat. serve with a sprinkle of parmesan and garnish with fresh herbs.
