whenever i’m meal prepping, i like to whip up a big batch of this miso marinade and pair it with different proteins throughout the week. the salty-sweet richness of this versatile marinade is the perfect complement to chicken, beef, or almost any type of fish. in this recipe, the savory miso is paired with a fresh salmon filet and marinated for up to three days, until the flavors have really absorbed. when cooked, the sugars begin to caramelize, creating a deliciously crispy crust. serve with microwavable veggies and jasmine rice for a quick and easy lunch or light dinner.

Ingredients

FOR THE MARINADE

  • ¼ cup mirin
  • ¼ cup sake
  • ¼ cup white miso paste
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 2 cloves garlic, minced

FOR THE MEAL

  • 1 lb. salmon filet
  • 12 oz. frozen stir fry vegetable mix
  • 2 packages microwavable jasmine rice

Instructions

  1. begin by preparing the marinade. combine mirin and sake in a saucepan over high heat. bring to a boil and let cook for about a minute, until the alcohol burns off, then reduce heat to low.
  2. whisk in the miso, sugar, garlic, and salt. simmer for 3-4 minutes, then remove from heat. let marinade cool to room temperature before proceeding.
  3. pour marinade over salmon and flip to coat. cover and refrigerate for 1-3 days before cooking.
  4. once salmon has thoroughly marinated, transfer to a parchment-lined air fryer basket.
  5. for medium-rare salmon, air fry at 350°F for 12 minutes. for a more well-done filet, cook for 16–17 minutes.
    • alternatively, salmon can be baked in a preheated oven at 400°F for 15–18 minutes.*
  6. serve with stir fry vegetables and rice, heated in the microwave per package instructions.
